I am not going to lie – fall baking is consuming my life right now. The weekend weather felt incredibly fall-like. Of course I didn’t dare to set a foot outside my door, but decided to bake up a storm in my kitchen instead. And it felt so good. I am back in my element wanting to make everything from scratch and putting my own spin on things.

On Saturday morning I woke up bright and early to get started on Homemade English Muffins. This was my very first attempt, you guys.

Ever since coming back from our travels, I’ve been wanting to try my hand at breakfast sandwiches. Complete with sausage, cheese, and egg. And when it comes to breakfast sandwiches I am all about English muffins. I’m sorry, but nothing else compares. They perfectly fit into your hand, have the right shape, and deliver on texture, chewiness and all-around goodness. Now that I know how to make my own, I am upping my carb game in the mornings.

Ever since making my Unbelievably Healthy Chocolate Chip Cookies a couple months back, I knew that I wanted to try my hand at a better-for-you Double Chocolate Cookie recipe.

I do not have favorites when it comes to cookies. Yes, I am not a big fan of dry or even crispy cookies, but generally speaking, I could never choose. There are just too many great cookie recipes in my life. Not that I’m complaining or anything.

But I was lacking a chocolaty cookie recipe in my collection that left such a big hole, it was basically begging to be filled. And I happily got to work.

A good Monday morning is spent talking about carbs in the best possible form. Don’t you agree? So let’s chat about Pretzel Twists. Which is easily my favorite way of enjoying anything pretzel these days. Actually, who am I kidding?! Pretzels in any way, shape or form are perfectly suitable for my palate. I have yet to meet a pretzel I didn’t like. Unless you count my baking fail from a couple of weekends ago when I was left with rock hard and beyond sad-looking pretzel twists. Those ones I seriously didn’t like. But let’s move away from fails and concentrate on my most recent success instead.

After getting to bite into one of these beauties, I was so happy I didn’t give up. Having made regular soft pretzels as well as pretzel rolls in the past, I knew that pretzel-baking wasn’t too difficult and worth every minute. Though it only takes 2 hours from start to finish until you can hold your own in your hands.

Welcome back. Did you have a good weekend? ‘Tis the season for moving house, isn’t it? Not only are some of our friends catching the moving bug, but we’ve certainly caught it as well. Adam and I just moved into a new home over the past week and we’re finally getting settled. We’re still in the same town and very much Minnesota bound.

This month we’ll be married 7 years and will have moved 6 times. Most of the previous moves (including this one) were pretty spontaneous and spur of the moment decisions. I guess we like to switch things up and explore new neighborhoods.

Right before we were able to move into our new house, we actually helped some dear friends move theirs first. So yeah, we’ve been pretty busy and I have had my fair share of packing and hauling boxes already. Whilst we were helping our friends, one of their old neighbors offered to provide us with lunch. How sweet is that? She had a delicious meal prepared for all of us, including carrot cake. It reminded me how much I love it and that I don’t make it nearly enough.

Carrot Cake also happens to be a great dessert to serve when the temperatures rise and you’re not in the mood for something too filling and heavy. Light, moist and simply fantastic. Continue reading
