Whew. How did it get to be Monday already and how in the world are we in the middle of April? Is it just me or have the last couple of weeks been flying by?

Like I mentioned on Friday, we attended a family get-together for Easter this past weekend and somehow started planning our summer. Lots of fun activities and mini vacations are in the work – it’s bound to be an eventful summer this year! I’ve already grilled dinner almost every night last week and had my first frozen yoghurt with a dear friend on Saturday. To say I’m excited about everything this warm weather has to offer would be an understatement.

Let’s not mention that it began to snow as we were headed home last night. I am choosing to ignore the temporary dip in temperature at this point. Warm weather HAS to be inevitable!

Give me two minutes in the Easter candy isle at Target and something like this is the only possible outcome. Literally feeling like a kid in the candy store. Apparently not much has changed since I was 12 years old.

The only difference is that nobody can stop me from stocking up on candy (to last me a lifetime) and mixing it with Fudge Brownies and Nutella Rice Krispie Treats.

Being a grown-up does have its perks.

I am blaming my impatience on how these brownies came to be. I knew that I wanted to create bars that included Easter candies, but at the same time I really had a craving for Rice Krispie Treats and Nutella. I know! It’s that darn sweet tooth of mine. It really has a mind of its own. What can I say?

But instead of waiting to make Easter Candy Brownies and Nutella Rice Krispie Treats, I figured combining the two would be even better. And you probably guessed it by now.

Carrot Cake – yay or nay? It’s been a long debate in our house.

Before I married Adam, I always thought carrots were a vegetable that everyone loved. You know, sort of like corn, peas, broccoli or green beans. Vegetables that are mild in flavor and make a frequent appearance on dinner tables around the country.

Since I love eating most vegetables, it never occurred to me that I could be sharing my life with someone who isn’t a huge fan. Over the years, I have had to get creative with sneaking in vegetables or simply not mentioning that my sweetie was chowing down on turnips and not regular potatoes :).

A method that has served us well so far. Except when it comes to carrots. Apparently carrots have such a strong taste that they can ruin an entire meal. Who knew?

So when I mentioned a couple of weeks ago, that I’d been really wanting to try to bake a carrot cake, you can probably imagine the look I received. There was no convincing that a dessert could include vegetables, much less carrots.

Giant Chocolate Peanut Butter Cookies for 2

My hubby and I were craving cookies on Friday night and don’t ask me how, but there were none to be found. Anywhere. And it was one of those deals where we neeeeded our cookie fix RIGHT NOW. So after analyzing the situation, I realized that no ordinary cookie would do. A major desperation could only be remedied by giant ooey gooey cookie-awesomeness.

Okay, today we are talking cookies again. Ready? I know I certainly am.

These cookies were a total experiment on so many levels.

First of, I just can’t get Meyer Lemons out of my head. Something about this time of year has me craving citrus, especially these wonderful lemons. So yeah, we are using whole lemons in this recipe, rind and all. And you’ll be transforming them into one amazing little snack. Turning lemons into candy might one of the best things I’ve done in a while. I am already obsessed with them, but being able to eat these plain? I’m in big trouble. They are sweet, tart, sour and perfectly lemony all at the same time. It’s incredible.

Second, herbs in cookies. Do it. I know, I know. I was hesitant too, but always wanted to give it a go. So I picked one of my favorites and one that goes extremely well with lemon. It’s a classic combination that doesn’t disappoint when it comes to the sweet stuff either.
