And so they strike again. No matter what, I can’t escape Girl Scout Cookies. Actually, I can’t escape the thought of them. I’ve been steering clear of the cute little girls and all of the Facebook posts posted by their parents to boost their sales. Because I know better. That box or two would disappear in a matter of minutes and start a delicious cycle I can’t give in to right now. I am fully aware that summer is just around the corner, which means it’s time to put down the cookies and start hitting the trails.
But wait! You might be thinking that you’re not looking at diet-friendly food right now. And you would be correct. I’m fully aware. This one’s for my motivation. I run and lead a mostly healthy lifestyle, so that when the mood strikes, I know just where to turn. I’ve said it before and I say it again, I am all about moderation and never depriving myself. And so another holiday week begins. Can I just say that I am totally and completely loving the fact that we’re in the midst of all things Christmas right now? Even though we’ve yet to finish our Christmas shopping, have a couple more get togethers on our calendar and have overall been considerably more busy, I will gladly and always make time for something nice that’ll please my sweet tooth. Especially when it happens to be one of the easiest yet most satisfying treats around – Chocolate Bark.
And this one is not just any old bark. With the layers of dark and white chocolate plus the addition of pistachios & cranberries, I have officially found the one that embodies Christmas for me.

This might possibly be the best bark ever! It’s taking my brownie obsession to a whole new level. Once you start eating it, you won’t be able to stop. So read on at your own risk!
You probably know by now that I don’t need a special day or occasion to come up with a sweet treat. But I’ve always felt like Friday nights deserve a special something something. And by special I mean a treat that takes not much effort to prepare and tastes out of this world amazing. Preferably a snackable item that puts you in just the right mood as you exhale and realize it’s weekend time!
Exactly what I’m going to give you today. Yes, there’s such a thing as brownie bark/brittle. Can you even imagine my reaction when I first discovered its existence?
I am not picky when it comes to brownies. I’m just as happy about a gooey middle piece than I am about a chewy corner. Adam on the other hand is all about the corners.
If you are anything like my hubby, you will love this bark. While there is a noticeable chewy texture throughout the entire bark, it’s also on the crunchy side, which is why it’s so addictive. 3 layers of Chocolate and Cookie Butter topped with luscious Salted Caramel Sauce and Chunks of Biscoff Cookies.
As I am typing this post, the pictures you see here have not yet been taken. That means that this recipe has not been taste-tested and I have no idea how the pictures are going to turn out. Always a scary situation as a food blogger. Now, I do have an inkling that this candy bark will not disappoint once I get to remove it from the fridge where it’s currently setting.
While I was making this bark, I definitely did my job well and took a bite of everything that went into it. I mean, I had to make sure that the cookie butter was good and the salted caramel sauce was just right. You never know if the manufacturer made a mistake when creating Biscoff cookies and chocolate always needs to go through quality control before it enters any of my recipes. But you already knew that, didn’t you?
So I asked myself how bad can it really be?? Is there such a thing as too much chocolate, caramel, or cookies? Since I answered all of those questions with a resounding no, I thought it was safe writing today’s post.
Either way, I am going to share this recipe with you!
