There’s a different story to every recipe I post. Some are family favorites waiting for future generations to be enjoyed, others are inventions I literally dreamed up over night, and a few happen to be complete accidents. Thus is the case with today’s cookie recipe. What should have been a quick and simple breakfast turned into experimenting and eventually resulted in me stuffing my face with cookies first thing in the morning. Happy accidents like this one is what I consider winning.

Blueberries and raspberries have and probably always will be my go-to berries of all time. There’s yogurt in place of eggs & butter. I even substituted some of the flour with extra crunchy granola. Hi! How was your weekend?

I thought I’d post this recipe today to savor the weekend a little bit longer. We had a jam-packed couple of days including tackling some projects around the house, squeezing in a couple of runs and going on a fun date together. Time sure seems to be flying by when the weather is improving and you can finally step outside without having to worry about frostbite or slipping on a piece of ice.

Late Friday night, I decided that we would be enjoying our much loved Blueberry French Toast the following morning. Never mind that it was getting kind of late since this breakfast casserole can be whipped up in mere minutes.


I didn’t really have any intentions of posting this recipe. Not because I didn’t want to share it, but this recipe has been around for so long now, that it simply didn’t occur to me to put it on the blog. Until I pulled out the recipe and realized that the original is nothing like the one I use now to make this casserole. It has undergone many changes over time, all of which were stashed in my memory. Blueberry Belgian Waffles with Whipped Cream

How was your weekend? We were spoiled with some beautiful weather. You can definitely tell that fall is officially here. The temperature during the day has been in the upper 60s with colder nights in the lower 40s, which is why we decided to host a bonfire on Friday night. Having a fire on a somewhat chilly night seasoned with perfect S’mores and good conversation is the perfect way to start any weekend. Some of us even got to see some shooting stars! Saturday was spent with cleaning and sprucing up our home as planned. We ended the weekend with some family time at my in-law’s home to watch the Packers dominate. Woohoo!

Here’s something I have to confess. I love Mondays. Sunday afternoons always have me looking forward to the next morning. As much as I enjoy the weekend, there’s just nothing like a fresh start. I am also an absolute morning person, who enjoys the beginning of every new day. Add a new week to that and you have one of the most cheerful people you’ve ever met. I also know that there are plenty of people who don’t share my enthusiasm for Mondays. Don’t worry, the weekend is not far off! Whether you love or despise Mondays, here’s a recipe that will brighten your day either way.
