Hey there! I hope you’re enjoying the last day of the long holiday weekend today. We have had the most wonderful weather so far. And by wonderful I mean hot, humid and sunny.
On Saturday, we braved the MN State Fair and tried everything on a stick you can possibly imagine. You’d think that since I am into everything baked and sweet, my favorite thing to eat at the fair would be a yummy treat, but it ain’t so. The one thing I look forward to the most are the pork chops on a stick. I am fully aware how that must sound, especially coming from me, but they simply can’t be beat. The smell of the chops grilling away, the special seasoning, and the way that they’re always cooked to perfection… it’s a carnivore’s dream, really.
So let’s move on to the complete opposite. Healthy breakfasts.

There’s a different story to every recipe I post. Some are family favorites waiting for future generations to be enjoyed, others are inventions I literally dreamed up over night, and a few happen to be complete accidents. Thus is the case with today’s cookie recipe. What should have been a quick and simple breakfast turned into experimenting and eventually resulted in me stuffing my face with cookies first thing in the morning. Happy accidents like this one is what I consider winning.
But it is no accident that you find my very favorite foods that I reach for on a regular basis in these cookies. Blueberries and raspberries have and probably always will be my go-to berries of all time. There’s yogurt in place of eggs & butter. I even substituted some of the flour with extra crunchy granola. You know you’ve had a good week when two posts in a row involve a lovely glaze. A simple sweet glaze is the best way to finish off a rather indulgent dessert (see Wednesday’s post) or to dress up a healthy breakfast bar. Not that you absolutely need to add the glaze… unless you’re anything like me, in which case a glaze becomes a necessity. Sugar is life.
Speaking of which. In today’s recipe you’ll find only natural sugars (minus the glaze), but you would never know hadn’t I told you. If these bars aren’t prove that healthy food is utterly delicious and just as satisfying as other alternatives, then I don’t know what is.
Gone are the days of a bowl of cereal or peanut butter toast for breakfast. Once you enjoy a Peaches and Mango Breakfast Bar it will be hard to go back to your old staples. The feeling of having dessert for breakfast is an absolute thrill. It sets me up for a fabulous start to my day every time.

Happy Friday, friends! Today we’re returning to one of my very favorite topics – breakfast. I don’t think I’ll ever tire of talking about how my relationship with breakfast has changed since starting this blog. Whether healthy and energizing or straight up indulgent, after almost 2 years, I seriously love it all.
So what’s the first thing you think of when you hear the word breakfast? Pancakes is always the first thing that pops into my head. Seven years ago when Adam and I were newly married, I had absolutely no idea how to cook a meal yet alone bake cookies. The day I mastered pancakes with the help of Bisquick was a wonderful one.
We probably had pancakes several times a week for quite a while. And it certainly didn’t matter if it was breakfast, lunch, or dinner time. It still doesn’t. Both of us love breakfast foods for any given meal, especially pancakes. But we’ve since graduated from the prepared mix and moved on to truly homemade ones, which is the best kind one can enjoy.
