Dreaming about breakfast and pizza in anticipation of the weekend. It’s the right thing to do on a Wednesday, really. Although, once you learn how easy it is to make this breakfast wonder, you might not want to wait until Saturday morning to give this a go. I mean easy when I say easiest ever. There’s no yeast, waiting, proofing or anything else that’s usually involved with making pizza from scratch.

My mind was totally blown when I prepared this pizza on a whim and am so ready to finally share.

I’ve been eating eggs for breakfast and lunch like it’s my job lately. I’ll take them in any way, shape or form. Usually on top of a piece of whole grain bread with turkey, spinach and any other vegetables we’ve got hiding in our fridge.

I am not exaggerating on the frequency of my egg consumption. Whenever I find something I really love, I usually make it over and over again until I can’t stand it anymore. The same goes for songs. Playing it on repeat for a couple weeks straight until I can’t listen to it one more time. I hope that’s not just me…

Good Monday Morning, friends! Are you ready for another installment of what we ate for breakfast over the weekend? I was seriously contemplating delaying this post, but after much consideration and taste-testing, I knew I couldn’t be so cruel. I HAVE to share. So here we have our average Saturday morning waffles. Ha! Just kidding – there’s really nothing average about these. Which is 100% the reason why I’m so in love. Well, the addition of chocolate and peanut butter doesn’t hurt either. And, um, doughnuts. It’s almost like pouring caramel sauce that tastes like peanut butter and maple all over your fabulous breakfast. Do you remember my maple nut scones from last week? I apparently have developed an interesting relationship with maple syrup and am not at all sorry about it… so, making my own (trashed-up) syrup was inevitable.

Hey Everyone! Did this week fly by or is it just me? Friday kind of snuck up on me and I can hardly believe the weekend is already here. Not that I’m complaining or anything.

Since time has elapsed quicker for me this week, I actually found myself struggling to get things done. I always try to squeeze as many things into my days as I possibly can. It’s Friday – Hooray! I realize that the Super Bowl is right around the corner and you might have anything but healthy breakfasts on your mind right now. Just bear with me. I doubt that’ll change after today, but getting it off my food brain feels real good.

Strawberry Twists

And so it continues. My breakfast obsession cannot be stopped, you guys – I hope you don’t mind ;). Since we’re in the middle of winter, I’ve been craving some color and fruit in my life. The grocery stores are filled with the most amazing citrus fruits right now, which is seriously holding me over until we have a bigger selection of fresh fruits and veggies around once again. As for now, I am totally relying on the produce I froze over the summer, knowing that I would be beyond happy I took the time to stock my freezer once the cold days set in. And am I ever.

Strawberries were begging to be used over the weekend and they didn’t have to twist my arm to make it into today’s recipe. I instantly knew that the homemade strawberry filling combined with the sweet dough would be a winner. I mean, how could one go wrong with that combo?

As soon as these came out of the oven, Adam volunteered to “assist” while I took these pictures. I was under some serious pressure to take these shots as quickly as humanly possible. We had some devouring to do!
