I don’t know about you, but until about a week ago I’d never heard of crepe cake or anything even close to it. I actually discovered it by browsing Youtube and stopping my scroll just long enough to be drawn in by those incredible layers. The tiny thumbnail definitely did it’s job and lead me to a video I just couldn’t get out of my head. I happened to watch it right before going to bed and had a hard time falling asleep in anticipation of what I was going to attempt to make the next day.
As soon as I woke from my sweet dreams, I jumped out of bed and got to work. Not even bothering to put on appropriate clothes or get ready. The excitement was real.

Before I got started on today’s recipe, I was really struggling as to what I should make. I’ve been craving apple crisp as I was in the mood for something slightly crispy, not too sweet and something that utilizes apples. But then I went even further with my daydreaming and all I could think about was apple pie.
The only problem was that I wasn’t ready to try my hand at a homemade pie crust just yet. I have never made my own before and couldn’t be bothered to put my head down and learn something new. Lemons have stolen my heart and I don’t care who knows it. I always have an abundance of lemons in my kitchen. I regularly drink a glass of water with half of a freshly squeezed lemon first thing in the morning. So I constantly stock up on lemons and sometimes happen to buy just a couple too many. Which I don’t mind at all ;). Because it results in delicious cakes like the one you see here.
I actually spotted the recipe for this cake a little while ago and have been waiting for just the right moment to whip it up. When the lemons started to accumulate, I took it as a sign and finally gave it a go.
You might know by now that I’m all about moist cakes. I can’t stand dry and flavorless cakes, which are two things this one does not have. The addition of pudding is basically the best thing ever. This post has been a long time coming. I don’t think I’ve ever struggled to bake/develop a recipe as much as I have with this one. Pretty sure I’ve been working on a lemon cake in loaf form ever since starting Deliciously Yum. I seriously thought it’d be one of those recipes I could whip up in no time and post on the same day. Well, almost 2 years and who knows how many failed attempts later, here it is.

Welcome back, everyone! I hope you had the most amazing weekend. I certainly did. Saturday morning one of my dearest friends and I hit up the big mall, aka the Mall of America, and did some serious damage. We arrived just shortly after 12 PM and left at around 10 PM. That’s right – 10 hours later we finally got back in our car and just wanted to crash right then and there. It was also my very first time to watch the various shops close and some lights being turned off. But I wouldn’t have done it any other way. On the way home we talked about how blessed we are that we’re exhausted from shopping. Which is the best kind of exhaustion, btw.
Sunday morning was all about church and family. The way it should be, especially on Easter Sunday. This is actually the first year that I didn’t purchase any kind of Easter candy for Adam and I. Given that today is the day after Easter, I might have to hit up Target and see what I can snag :).
