Frosted Funfetti Cake

No party is complete without cake. So why not give this one-bowl Funfetti Cake a try! Say goodbye to the box!

You’ve made it! Friday is finally here. With all the excitement we had going on this week, it felt like time was flying right on by. And just like that we’ve come to the end of birthday week. I can’t wait to move on from my favorite day of the year to my second favorite – Christmas! I just adore this time of year. Starting with my hubby’s birthday and ending with New Year’s festivities, the fun has only just begun. I seriously cannot wait to get into the kitchen and start making a teeny weeny dent into my holiday baking list.

But first let me tell you about this cake.

Funfetti Cake to be exact. It just had to be done. Birthdays call for cake and I wasn’t going to let this one pass without one. Although I nearly did.

After baking a disastrous version of this cake the day before, I almost decided to skip the birthday cake tradition and whip up something else instead. But I felt as though my pride and reputation were on the line. What if someone asked Adam what I had made him for his birthday and he would let them know that I didn’t deliver on the one thing he requested?! Could I even call myself a food blogger any longer? Would funfetti cake get the best of me? How would our craving for all things funfetti be stilled? And what about all those sprinkles I had just bought?

Right there and then I did what all bakers do – armed myself with a sufficient amount of flour, sugar and eggs and stared funfetti in the face! [Read more…]

Happy October 1st. Fall is in full swing and there’s nothing I love more than to snuggle up, sip on a warm beverage and snack on something yummy. Preferably while holding a piggy. Say what? I shared yesterday in this post that Adam and I adopted two baby guinea pigs. It really was a spur of the moment decision. Somehow we ended up at a pet store on a Friday night and before we knew it, we were holding two piggies. Once we held them, there was no turning back. Pippa and Pippin had found a new home!

I had no idea that guinea pigs are fruit and vegetable fanatics. More vegetable than fruit, really. Watching them chowing down on peppers, carrots, kale, and cucumbers has really inspired me to do the same. I am not kidding – when you watch them get so excited about their “treats” that they can’t help but run around in circles in their cage, I start reaching for carrots without even knowing it. Need to add more veggies to your diet? Get a guinea pig or two ;).

While I love vegetables, there is something else that has me skipping with joy around our house. 3 words: Pumpkin Coffee Cake. [Read more…]

Happy Monday! Welcome to the last full week of July. I know I’ve said it before, but summer just seems like a blur to me so far. I went to the mall on Saturday and couldn’t believe all the back to school sales that were going on. Crazy! Also, I accidentally smelled a candle that practically screamed fall and I totally wasn’t ready for it. I adore that beautiful season, but no, just no.

I was relieved coming back home to a tall glass of iced coffee and a big slice of Banana Split Cake. Summer at its finest.

I cannot wait to tell you all about this yummy snack cake, but first let me start with the weekend. You know the feeling after you attended a concert that keeps you feeling super energized and makes you smile every time you think about the fabulous time you had? And you can’t stop listening to the incredible songs over and over again? That’s me right now.

Now imagine if you got to be part of the actual concert, meaning sharing the stage and performing with one of your favorite singers. Bursting with happy feelings a hundred times over.

Our church hosts different artists throughout the year, and last Saturday we welcomed Keith and Kristyn Getty. They have written some of the most well-known and loved modern hymns like “In Christ Alone” or “The Power of the Cross”. A couple of weeks before the concert, they invited some people in our community to be part of a choir that would perform live with them. And I got to be part of it.

To say we had a blast would be an understatement. It was quite an experience to get to work with professional musicians and witness their talent first hand. Best time ever.

Even though Saturday was a late night, I had tons of energy the following morning and knew the best way to burn it off was in the kitchen.

Whew. How did it get to be Monday already and how in the world are we in the middle of April? Is it just me or have the last couple of weeks been flying by?

Like I mentioned on Friday, we attended a family get-together for Easter this past weekend and somehow started planning our summer. Lots of fun activities and mini vacations are in the work – it’s bound to be an eventful summer this year! I’ve already grilled dinner almost every night last week and had my first frozen yoghurt with a dear friend on Saturday. To say I’m excited about everything this warm weather has to offer would be an understatement.

Let’s not mention that it began to snow as we were headed home last night. I am choosing to ignore the temporary dip in temperature at this point. Warm weather HAS to be inevitable!
