Happy Monday! Are you ready for a week of Valentine’s treats? If not, this is your fair warning. There may or may not be an abundance of chocolate, sprinkles and unbelievable desserts coming your way. Much like any other week, ha! I was definitely thinking about the upcoming romantic holiday and have something for everyone coming up. A no-bake treat, something a bit more fancy, and a yummy surprise that no one could say no to.

Let’s start out with a crowd-pleasing dessert bar. Red Velvet and Cheesecake definitely speak the language of love, especially when combined into one tasty creation.

These homemade bars are super easy to prepare, but I am sure they would impress just about anyone with taste buds and a craving for something sweet. I also love the fact that they can be prepared in just a couple of minutes and are totally make ahead friendly. In fact, they actually taste better if they had several hours to chill in the fridge.

Cherry Cheesecake Brownies

Amazing Cheesecake Brownies topped with Cherry Filling. These festive-looking bars have Christmas written all over them.


It was just a matter of time. Baking a pan of bars that are perfect to serve during the days leading up to Christmas (and beyond) was on the very top of my list. Every time I looked at it, I kept thinking that today was the day. But inspiration hadn’t struck, so I waited patiently until I had just the right idea.

And then it happened. While strolling the isles of the grocery store and spotting Cherry Pie Filling, I instantly knew that I wanted to use it for my future bars.


Having been a bit obsessed with all things red and white this year, these bars turned out just the way I was hoping for. A generous layer of cheesecake baked on top of brownies and topped with those beautiful cherries.

No-Bake Lime Cheesecake Parfaits

 Do you like limes, cheesecake and a dessert that takes minimal time and effort to prepare? Me too. Let’s dive in together!


Hey guys! Friday’s here, the weekend is imminent and it’s time to take things easy. That’s exactly what I was thinking about when I came up with this dessert. I wanted something that could be thrown together in no time, but didn’t sacrifice in yumminess or flavor.

Also, I had about 12 limes in our fridge that needed to be used up :). Aren’t limes the best? I substitute limes for lemons whenever I can. I love that limes don’t have any seeds to worry about and could never get enough of the wonderful taste. With that being said, you could total use lemons if you’re not feeling the lime.


Lately I’ve been in the mood for creamy and cold desserts that go beyond your regular bowl of ice cream. Cheesecake popped into my head, but I wanted something a little bit lighter. Let me just tell you, these Lime Cheesecake Parfaits totally hit the spot. [Read more…]

Trio of Mini Cheesecakes (Dairy-Free)

No-bake Mini Cheesecakes made without dairy. This recipe features a classic graham cracker crust, has the most amazing “cream cheese” filling and is finished with three wonderful toppings.


A couple of weeks ago I challenged myself to find a recipe for dairy-free cheesecake. I probably mentioned before that my husband has developed an intolerance against lactose. Recipes that contain small amounts of butter or even chocolate, usually go over fine. I have found that substituting almond milk for regular milk works extremely well in most recipes, too.

But I was sort of stumped when it came to cream cheese and had made a mental note that cheesecake would probably not be in our future again. But since I like a challenge and don’t give up easily, I changed my mind and was determined to figure this one out.


Also, I wowed that I would never put anything on this little blog of mine if it didn’t taste absolutely delicious. Good thing I live with one of the most amazing food critics. Adam is somewhat of a picky eater and yes, sneaking in vegetables and other “weird” things has become part of my regular routine, ha.

To be completely honest, I was worried about having him taste-test this one. I thought these mini cheesecakes tasted amazing, but there’s always the bias factor… so I finally handed him one of these little cakes. [Read more…]
