Healthy snacks are pretty much an essential in our home. Adam and I have always eaten smaller meals throughout the day with a couple of snacks here and there. Not only do I like to make my own snacks, but I’ve really been concentrating on making healthy yet satisfying ones over the last couple of months. We’re still getting settled into our new home and have just a few projects (that require quite a bit of muscle work) left. So I decided to stock up our “good for you” options that’ll provide us with plenty of energy.
And when I stumbled upon this new to me recipe, I knew instantly that I had to share it with all of you. This one’s simply too good not to.

Welcome to another Monday! I hope you all had a wonderful weekend. Mine can basically be summed up by these pictures. Celebrating Mother’s Day was the main event, of course. After making these tarts a couple of weeks ago, I knew it wouldn’t be long before they’d make their appearance once again. Being inspired by individual desserts, the giant pack of Costco’s strawberries in my fridge, chocolate, and Friday’s smoothie, I knew exactly what to whip up for Sunday’s occasion.
I didn’t think I could go wrong with a scrumptious Oreo crust and a no-bake strawberry cheesecake filling. Make the chewiest, fudgiest and most scrumptious No-Bake Bars ever. They’re all about chocolate, peanut butter and coconut!
No-Bake Bars, you guys. Hands down one of my favorite things to make. It never ceases to amaze me how many different versions/combinations you can come up with when it comes to no-bake recipes. They’re highly adaptable and can be changed in so many different ways. I think I like making them so much because when it comes to actual baking, precision is critical. Measuring correctly and following instructions is so important.
Not when it comes to no-bake wonders, though. You can pretty much guesstimate and throw together anything you have a craving for. I have never had a no-bake treat I didn’t like.
This one surpassed my expectations. As the recipe title indicates, there’s plenty of chocolate, coconut, and peanut buttery goodness to be found in each bite. But, there’s more. More coconut (in the form of coconut oil), a healthy amount of pecans for texture and yummy oats.
Peanut Butter Cups move over – Almond Butter Date Bites are about to steal your show. Since they’re healthy, indulgent and super easy to make, you really don’t stand a chance.
Oh my! Can we take a second and talk about how awesome almond butter is? I realize that I might be the last food blogger/person on earth who had never tried it before. I am happy to report that my curiosity finally got the best of me and I bought a jar just a couple of days ago. The verdict – it’s completely empty.
A classic case of I didn’t know what I was missing, but I’m so glad I finally discovered it. Better late than never, for sure!
And before giving myself the chance to eat it straight out of the jar by the spoonfuls, I figured it would be best to do some recipe testing while I was at it.
So I returned to the store, grabbed a package of medjool dates, dark chocolate and got to work. Chocolate-filled Mini Tarts, rich layers of Caramel and salty-sweet Pretzel Crusts. Deeelicous!
Happy Monday to you. I hope you’re in the mood for something salty, sweet, chocolaty and oh-so decadent. Yup, we’re continuing the love for all things caramel that started (once again) last Friday and also continuing on with the theme of preparing things I’ve never made before. The success of my first ever cupcakes posted on the blog, certainly gave me enough confidence to try my hand at other desserts that have been swirling around in my head, aka Tarts. So, as I set out to purchase a tart pan and inevitably stumbled upon mini versions, I basically bolted out of the store and headed straight for the kitchen. Inspiration struck at lightening speed. Caramel! Chocolate! Pretzels! Mini Tarts! Sooo much excitement.
I was totally up for the challenge of making everything from scratch, but to be honest, I was mostly just hoping that my tart experiment would be successful in the flavor and taste department. Thinking about combining 3 of my favorite things into one epic dessert, basically had me drooling during the ride home.
