Happy almost weekend, everyone! As promised, I have a colorful and sprinkle-loving treat for you today. Which happens to be a no-bake recipe as well…. sort of. At the beginning of the week, I told you that a no-bake surprise was heading your way and I actually didn’t take into consideration that in order to make these truffles, you have to bake brownies first. Or buy a pan of brownies, or use leftovers – is there even such a thing as leftover brownies??

Happy Wednesday, everyone! Today we’re getting fancy with my all-time favorite French pastry. Last year I tackled a challenge I’d made for myself. Conquer the art of making croissants from scratch. After a massive fail I succeeded and was beyond excited to share the results with all of you. Now some of you might remember that I promised to update the post with some step by step pictures to make it easier to follow along. Hi guys! I hope all of you had the loveliest of weekends. This time of year is calling me into the kitchen. I can’t help but be drawn to my oven (or freezer in this case) and play with new recipes. Most of which have been turning out quite well. Except for those Dark Chocolate Pomegranate Bars I made last week. They basically looked like coal in the shape of tiny bricks and the taste was less than desirable. A single bite is all it took to knowing that something went terribly wrong. And don’t even get me started on the texture. No, just no. One of these days I’ll hopefully be able to redeem them, but for now I’d like to forget about my big baking disaster.

So I turned to my freezer instead. I was looking for redemption. Sweet, sweet redemption. Though in serious doubt that my second healthier recipe of the day featuring some unusual ingredients would give me what I was looking for, I decided to give it a whirl anyway.

Holiday Mint Cookies

Hello, fellow cookie lovers! How was your weekend? Adam and I had the best time visiting lots of friends and enjoying the Christmas season with those who matter most to us. When we made the initial plans to get on the road and travel to Iowa, I remember being worried about the weather. I am always hesitant to go anywhere when there is lots of snow in the forecast and temperatures are dropping extremely low. But have you noticed the absence of weather talk here on the blog lately? Things are super warm (high 40s) and there’s not a single flake of snow on the ground as of right now.

Things are feeling a little weird, but the hubby and I are loving it. We’re not being trapped inside by Mr. Frost, have no snow to shovel, and most importantly aren’t freezing cold. Running errands and having full feeling in all of my limbs is a beautiful thing. And even though we aren’t covered in anything white, we are definitely feeling Christmas in the air.

Which may or may not be largely due to these Holiday Mint Cookies. Who needs snow when you have cookies to get you in the mood? I take cookies over winter anytime ;). [Read more…]

And so another holiday week begins. Can I just say that I am totally and completely loving the fact that we’re in the midst of all things Christmas right now? Even though we’ve yet to finish our Christmas shopping, have a couple more get togethers on our calendar and have overall been considerably more busy, I will gladly and always make time for something nice that’ll please my sweet tooth. Especially when it happens to be one of the easiest yet most satisfying treats around – Chocolate Bark.

And this one is not just any old bark. With the layers of dark and white chocolate plus the addition of pistachios & cranberries, I have officially found the one that embodies Christmas for me.
