It’s official, guys. We’re less than 1 week away from Christmas Day. Ahhhh! The buildup is getting bigger and better. As I have mentioned before, I almost love the days leading up to Christmas, especially Christmas Eve, more than the actual day. I wish I could bottle up the anticipation and excitement I feel right now for the rest of the year (or the new year, which is right around the corner). My husband recently said that I will probably never grow out of my childlike fascination and enthusiasm, ha. I hope he is right!

Last night he took me to an amazing Christmas Lights setup at a nearby farm. Over 100,000 lights all synchronized to Christmas music almost set me over the edge. They even had a giant snowman display singing “The 12 Days of Christmas”, which might be the cutest thing I’ve seen in a very long time. I could have driven through that Christmas Wonderland over and over again. Once we returned home, I was thrilled that a freshly brewed cup of tea and these Gingerbread Men were awaiting us.

Holiday Mint Cookies

Hello, fellow cookie lovers! How was your weekend? Adam and I had the best time visiting lots of friends and enjoying the Christmas season with those who matter most to us. When we made the initial plans to get on the road and travel to Iowa, I remember being worried about the weather. I am always hesitant to go anywhere when there is lots of snow in the forecast and temperatures are dropping extremely low. But have you noticed the absence of weather talk here on the blog lately? Things are super warm (high 40s) and there’s not a single flake of snow on the ground as of right now.

Things are feeling a little weird, but the hubby and I are loving it. We’re not being trapped inside by Mr. Frost, have no snow to shovel, and most importantly aren’t freezing cold. Running errands and having full feeling in all of my limbs is a beautiful thing. And even though we aren’t covered in anything white, we are definitely feeling Christmas in the air.

Which may or may not be largely due to these Holiday Mint Cookies. Who needs snow when you have cookies to get you in the mood? I take cookies over winter anytime ;). Continue reading

Finally. A Christmas cookie. The ONE cookie everyone would notice missing if it didn’t make an appearance on our cookie tray. It’s that well-loved and embodies Christmas for us.

It’s pretty to look at, has plenty of sprinkles, and satisfies young and old alike. Last year I made another version of sugar cookies right before the Christmas season hit. It was one of those times where we just couldn’t wait any longer to enjoy a scrumptious cookie and a birthday celebration seemed like the perfect excuse.

Gingerbread Muffins

I made you muffins. Mainly because I clearly can’t stop thinking about Christmas morning and scrumpdelicious food. Combine the two and Gingerbread Muffins were the only logical outcome. You see, I was considering turning these into cupcakes but I thought that cupcakes don’t really qualify as an appropriate breakfast item. Muffins on the other hand are undoubtedly accepted by all. I am so excited about these. What can possibly be better than the ultimate gingerbread flavor combined with the perfect muffin batter?
