I never thought that I could become obsessed with granola. Not only am I not a breakfast girl (though I’m slowly turning into one), but I especially don’t understand the obsession with cereal. Now cereal makes a great snack if eaten dry, but the addition of milk that turns it into a soft and soggy mess… no, thank you.
That’s exactly where granola comes into play.

Make the chewiest, fudgiest and most scrumptious No-Bake Bars ever. They’re all about chocolate, peanut butter and coconut!
No-Bake Bars, you guys. Hands down one of my favorite things to make. It never ceases to amaze me how many different versions/combinations you can come up with when it comes to no-bake recipes. They’re highly adaptable and can be changed in so many different ways. I think I like making them so much because when it comes to actual baking, precision is critical. Measuring correctly and following instructions is so important.
Not when it comes to no-bake wonders, though. You can pretty much guesstimate and throw together anything you have a craving for. I have never had a no-bake treat I didn’t like.
This one surpassed my expectations. As the recipe title indicates, there’s plenty of chocolate, coconut, and peanut buttery goodness to be found in each bite. But, there’s more. More coconut (in the form of coconut oil), a healthy amount of pecans for texture and yummy oats.
Peanut Butter Cups move over – Almond Butter Date Bites are about to steal your show. Since they’re healthy, indulgent and super easy to make, you really don’t stand a chance.
Oh my! Can we take a second and talk about how awesome almond butter is? I realize that I might be the last food blogger/person on earth who had never tried it before. I am happy to report that my curiosity finally got the best of me and I bought a jar just a couple of days ago. The verdict – it’s completely empty.
A classic case of I didn’t know what I was missing, but I’m so glad I finally discovered it. Better late than never, for sure!
And before giving myself the chance to eat it straight out of the jar by the spoonfuls, I figured it would be best to do some recipe testing while I was at it.
So I returned to the store, grabbed a package of medjool dates, dark chocolate and got to work. It’s Friday! I’ve been looking forward to this weekend for quite some time. Easter is one of my very favorite holidays. I certainly love any occasion that allows me to prepare some special treats and go all out in the food department. And don’t even get me started on the candy. I am smitten by those cute Lindt chocolate bunnies every year – the perfect treat for any Easter basket, if you ask me :).
But this weekend means so much more. I am beyond humbled that I get to celebrate and rejoice in the life God has given me through his Son, Jesus Christ. I already cannot wait to wake up Sunday morning, go to church and proclaim once again that Christ is risen! Now and forever. I’m getting goose bumps just thinking about it.
It is my prayer, that you, my lovely readers, know Christ and receive the gift that he so generously offers to all of us. I’ve never mentioned this before, but I often pray for everyone that visits Deliciously Yum to develop an eternal relationship with the one and only Savior. So much sweeter, more satisfying and awesome than anything I could ever whip up in my kitchen….

Inspired by one of the most loved Girl Scout Cookies – Samoas. This candy bark is just as addicting and the definition of the word easy!
And so they strike again. No matter what, I can’t escape Girl Scout Cookies. Actually, I can’t escape the thought of them. I’ve been steering clear of the cute little girls and all of the Facebook posts posted by their parents to boost their sales. Because I know better. That box or two would disappear in a matter of minutes and start a delicious cycle I can’t give in to right now. I am fully aware that summer is just around the corner, which means it’s time to put down the cookies and start hitting the trails.
But wait! You might be thinking that you’re not looking at diet-friendly food right now. And you would be correct. I’m fully aware. This one’s for my motivation. I run and lead a mostly healthy lifestyle, so that when the mood strikes, I know just where to turn. I’ve said it before and I say it again, I am all about moderation and never depriving myself. Because if I do, I know that my next opportunity of treating myself will move into binging. So I’m always allowing room for a little something sweet and today’s treat hits just the spot!
