Hey, hey. I have been waiting to share these cookies with you for what seems like forever now. I made this batch of yummies a couple of weeks ago in preparation for today’s post. What’s so special about today’s post, you ask? These cookies were created for Nikki’s blog over at Chef in Training. I’ve recently become a monthly contributor to her site and feel so honored to do so.

Which is precisely why this post will be short and sweet – much like these cookies. They are packed with melted chocolate, dark cocoa powder and big chunks of chocolate. The addition of creamy peanut butter and Reese’s Pieces was out of pure necessity, of course :). And they are pretty short-lived… seriously, I’d be surprised if these lasted more than a couple of hours in your house. If they do, please tell me your secret for self-control, ha!

Thick, soft and chewy. Just how I like my cookies. Guys, I promise you this recipe will be worth checking out. I hope you hop on over for these outrageously scrumptious goodies by clicking here and browse through some of Nikki’s incredible recipes, too. Thank you so much and have the most wonderful Wednesday, friends!!

XOXO

Seven Layer Neapolitan Cookies

Seven Layer Cookies are made up of stacked almond cakes, apricot preserves and enveloped by two layers of chocolate coating. There’s nothing average about these cookies. Get ready to be wowed.

I had no intention of making two desserts that involve seven layers in a row. None whatsoever. And it didn’t really dawn on me that I had done so until I took a look at my pictures this week.

I hope you don’t mind. If there’s anything that can beat a regular cookie, it must be one that consists of seven layers.

Seven extremely delicious layers to be exact.

When I found out that these cookies are made up of cakes, I could hardly contain my excitement. Any day that I get to combine two desserts, i.e. cookies and cake into one, is a major win in my books.

I don’t know about you, but I am always so impressed when I see layer cakes and imagine the amount of work that must have gone into creating them. Which is precisely why I had never attempted anything in that arena.

Oh wait, there was that one time when I tried making checkerboard cookies with the help of my brother-in-law and failed miserably. It was around Christmas time, I had just married into the family and all I wanted to do was show off my housewife skills.

Almost six years later, I finally decided to redeem myself.

Candied Lemon and Thyme Salted Chocolate Chippers

Candied Meyer Lemons and Fresh Thyme combined into one scrumptious Chocolate Chunk Cookie and finished with Fleur de Sel. Plus, find out what makes this cookie so soft and chewy.

Okay, today we are talking cookies again. Ready? I know I certainly am.

These cookies were a total experiment on so many levels.

First of, I just can’t get Meyer Lemons out of my head. Something about this time of year has me craving citrus, especially these wonderful lemons. So yeah, we are using whole lemons in this recipe, rind and all. And you’ll be transforming them into one amazing little snack. Turning lemons into candy might one of the best things I’ve done in a while. I am already obsessed with them, but being able to eat these plain? I’m in big trouble. They are sweet, tart, sour and perfectly lemony all at the same time. It’s incredible.

Second, herbs in cookies. Do it. I know, I know. I was hesitant too, but always wanted to give it a go. So I picked one of my favorites and one that goes extremely well with lemon. It’s a classic combination that doesn’t disappoint when it comes to the sweet stuff either.

The way this cookie dough smells will knock your socks off. Just wait until you bake them. Mmmmmm. [Read more…]

Triple Chocolate Caramel Drizzle Cookies

Triple Chocolate Caramel Drizzle Cookies by Deliciously Yum!

As promised, we are putting to good use the Salted Caramel Sauce we made yesterday. For me, the combination of salty and sweet doesn’t shine more than through a cookie. And there is no better recipe to do it with than this one. These dark, fudgy, and triple chocolate cookies are beyond delicious all on their own, but once you stuff them with caramel, you will never look back.

The reason why I am so enamored with these cookies is that they taste like individual brownies. It’s the best thing ever. Especially since I’ve been on a brownie kick lately.

Aren’t you glad you don’t have to choose between cookie and brownie today? Since I am beyond indecisive, I am always relieved when I don’t have to make a choice between two things I absolutely adore. You can’t lose. [Read more…]

Cake Batter Golden Oreos Rainbow Cookies

Um, I stuffed cookies with cookie sandwiches and added cake mix, too. Can you tell it’s Friday?

Being the cookie addict that I am, I couldn’t wait another minute to whip these up. Oreos, cake mix, and don’t forget about the sprinkles. This combo is one of my favorites yet. It features everything I get most excited about. It may sound like a lot of different things thrown together into one cookie, but it works so well. A joy to look at and a partay in your mouth.

You won’t have to decide between cake or cookie anymore – you can have it all!

These cookies are a riff on my Thick and Chewy Reese’s Chocolate Chunk Cookies. I didn’t feel like playing around with a new recipe. I was looking for tested, approved, and foolproof. And I got exactly what I was hoping for. Incredible deliciousness. [Read more…]
