There’s nothing like fresh fruit in the summertime. The amount we’ve been consuming lately is slowly getting out of control. With no end in sight since the best of summer’s produce is yet to come. With Memorial Day right around the corner, I really wanted to make a fun dessert that showcased my love for chocolate and fruit once again. Plus, it’s been a hot minute since my last brownie dessert.

If you’re a fan of dessert pizza, then you will certainly love this version. The idea for pizza in dessert form came to me last weekend on our Kansas trip. We’d stopped at Pizza Ranch to enjoy a quick meal with family. If you’ve been there before, you know that one of the highlights is their dessert pizza. Now, they don’t offer the brownie and fruit version you see here, but as I sat their devouring my two slices of their “Cactus Bread”, I secretly was craving something with a bit more chocolate and chewiness.

Happy Monday! Welcome to the last full week of July. I know I’ve said it before, but summer just seems like a blur to me so far. I went to the mall on Saturday and couldn’t believe all the back to school sales that were going on. Crazy! Also, I accidentally smelled a candle that practically screamed fall and I totally wasn’t ready for it. I adore that beautiful season, but no, just no.

I was relieved coming back home to a tall glass of iced coffee and a big slice of Banana Split Cake. Summer at its finest.

Carrot Cake – yay or nay? It’s been a long debate in our house.

Before I married Adam, I always thought carrots were a vegetable that everyone loved. You know, sort of like corn, peas, broccoli or green beans. Vegetables that are mild in flavor and make a frequent appearance on dinner tables around the country.

Since I love eating most vegetables, it never occurred to me that I could be sharing my life with someone who isn’t a huge fan. Over the years, I have had to get creative with sneaking in vegetables or simply not mentioning that my sweetie was chowing down on turnips and not regular potatoes :).

A method that has served us well so far. Except when it comes to carrots. Apparently carrots have such a strong taste that they can ruin an entire meal. Who knew?

So when I mentioned a couple of weeks ago, that I’d been really wanting to try to bake a carrot cake, you can probably imagine the look I received. There was no convincing that a dessert could include vegetables, much less carrots.

But with Easter getting closer and closer, I could finally stand it no longer and set out to create a carrot cake that would please a self-proclaimed vegetable-avoider. Continue reading

Pumpkin Bars with Cream Cheese Frosting

In our house fall wouldn’t be fall if we didn’t have these bars. Since almost all the trees are in full foliage, it was definitely time to bake up a batch. This is a family favorite that has been passed down from generation to generation. Something so pure and perfect that is simply unforgettable and loved by all. Tweaking recipes and changing them up a bit is something that comes naturally to me. I am definitely not one that enjoys the same thing over and over. Hello food blog! I like to keep myself engaged and try new things whenever possible. But I realize that some things are meant to be preserved and cherished. Pumpkin Bars with Cream Cheese Frosting are certainly one of them. I follow the recipe to a T and can’t think of a time that these didn’t come out just right.
