You guys, bread pudding is having a moment. At least in my life. There’s a local restaurant in our town that makes an incredible basic version. But there are only so many times one can visit the same restaurant several nights in a row and only order dessert before people start noticing and the credit card starts to smoke. So I finally decided that enough was enough.

It was time for me to stop being lazy, put my bread pudding skills to the test and start experimenting with yet another version. Plus, it gives me the perfect excuse to consume copious amounts of said pudding in order to get it just right for the blog.

And since this is the season of all things pumpkin, I couldn’t help but put a pumpkin spice spin on my current favorite dessert. Let me tell you one thing – I don’t think I’ll be going back to that restaurant any time soon. This made-from-scratch Pumpkin Spice Bread Pudding is calling my name. Cream Cheese Drizzled Pumpkin and Cookie Butter Bars

All I wanted were thick, moist, and drool-inducing bars that screamed fall to me. Pumpkin as one of the main ingredients was a must – no explanation needed. As I looked through the pantry my hand automatically reached out and grabbed the cookie butter jar. Once I opened the lid and smelled the wonderfulness that is cookie butter, I knew the flavors would work extremely well with pumpkin. I mean, cookie butter is basically made out of cookies and you can never ever go wrong with adding cookies to a dessert recipe. It’s a guaranteed winner!

The addition of semisweet chocolate chips, a yummy cream cheese drizzle, and extra cookie crumbs were always a given. There’s no such thing as a good pumpkin bar without cream cheese in one way or another. At least in my recipe book, ha.

If you’d asked me two years ago if I would ever make a recipe using figs, you would have heard a resounding no from me. I was beyond intimidated by this gorgeous fruit. Even though they’re pretty to look at and have intrigue written all over them, I couldn’t bring myself to picking up a few. And then Costco happened on a Monday morning. Proudly displaying case upon case of the most gorgeous figs I’d ever laid eyes on. Just like that I grabbed a case, made my way to the register, and started this figgy relationship.

Things quickly got serious. I found myself going back for just one more all day long. I don’t even care to admit that I’m completely and totally addicted. And I suppose I have this little blog to thank for that. It’s the one thing that pushes me to try new things, invent new recipes, celebrate the classics, and keeps my life more interesting and exciting than I could have ever dreamed. Which also means that I have to thank you. Because none of this would happen or could be possible without you. Cheesy, but oh so true.

Pretty sure I purchased those on a whim one day in Trader Joe’s and decided to hide them from myself. Burying the container amidst large bags of flour, sugar, and everything else you could possibly need to satisfy your baking addiction. Because I cannot be trusted around them.

Before I got started on today’s recipe, I was really struggling as to what I should make. I’ve been craving apple crisp as I was in the mood for something slightly crispy, not too sweet and something that utilizes apples. But then I went even further with my daydreaming and all I could think about was apple pie.

The only problem was that I wasn’t ready to try my hand at a homemade pie crust just yet. I have never made my own before and couldn’t be bothered to put my head down and learn something new. That’s a project for another day. Keeping my fingers crossed to be able to post the best apple pie recipe this fall. Keep your eyes peeled.
