Easter Brownies

Brownies are one of the most loved desserts no matter the occasion, but this Easter version deserves special recognition!

Welcome to a new week, friends! I can officially say that I’ve caught the Easter bug. That’s bug and not bunny, ha! After the weather started to decline over the last couple of weeks, I had a hard time getting into the mood. But I’m happy to report that I’m all in. It’s amazing what a couple of sprinkles, pastel Easter eggs and chocolate can do for you. Also, the temps are looking to be much, much warmer – just in time for an outdoor Easter egg hunt this coming weekend. I’m talking about the little cousins and not us, of course.

We actually started things off yesterday with our first family get together for Easter. Which was the perfect time to whip out a brownie recipe I had been working on for the last couple of weeks.

I know I have plenty of recipes featuring homemade brownies on this blog already, but the itch for perfection and my all-time favorite brownie recipe never went away. And I doubt that it ever will. Much like I can’t choose a favorite of all the cookie recipes I’ve developed and written about. I seriously love them all. It really just depends on what mood I’m in or craving at the moment. And right now I simply can’t get enough of super fudgy, extra chocolaty (triple chocolate) and unbelievably chewy brownies.

Loaded with some of Easter’s finest candy. Sounds good? Let’s dive right in! [Read more…]

Chocolate Chip Cookie Stack

Happy Monday, friends! Our outdoor adventures turned into full on spring cleaning over the weekend. Both of us were exhausted by the end of Sunday, but it was well worth it. As long as the weather is nice, I don’t even care what we’re up to. After being cooped up inside for quite some time while winter lasted, I find it funny how excited we were to sweep the garage or take down our outdoor Christmas lights, ha! Hopefully we’ll continue to feel that way once weekly lawn mowing duties come around too… Even though I was running low on energy, I still had enough strength to whip up something delicious in our tiny little kitchen.

The result was anything but small. If you’re deciding to give this a go, you are in for an utterly satisfying, rich and decadent treat. Though it requires a little bit of work and patience, it is well worth it in the end.

Lemon Bars that come together in no time. The ingredients might be simple while the taste is anything but.

Simple Lemon Bars

Spring is in the air! I hope you’re experiencing the same heat wave wherever you are. I am finally excited to peek at the weather forecast once again. With highs in the mid 50’s all week long and having more daylight at night, we can’t wait to get back to our evening walks. It’s amazing what a huge difference warmer temps and a little bit more sunshine can make. It’s the simple things that bring me the most happiness.

Also, lemons. I’ve been stocking up on way too many lately. While citrus season was in full swing, I couldn’t help but buy all the lemons, limes, grapefruits and anything else citrusy I could get my hands on. Freshly squeezed lime juice over a salad is the best and so are roasted chickens stuffed with amazing lemons. I’ve also gotten into the habit of eating a ruby red grapefruit in the morning and enjoying a hot cup of water with even more lemon juice… yup, citrus fruits are having quite the moment.

And when life gives you an abundance of lemons, you make Simple Lemon Bars. [Read more…]

So if you’ve been waiting for a non-chocolaty dessert, this one is for you. Never did it cross my mind that I’d be willing to sacrifice chocolate over something fruity and sour like lemons. Don’t get me wrong, I absolutely adore citrus in all variations, but citrus over chocolate? On the day of love? If you would have told me that a lemon dessert is about to steal the show this Valentine’s Day, I would have made a very bitter face at ya.

Being proven wrong is a beautiful thing in this case. [Read more…]

These homemade bars are super easy to prepare, but I am sure they would impress just about anyone with taste buds and a craving for something sweet.
