Hey, hey. I have been waiting to share these cookies with you for what seems like forever now. I made this batch of yummies a couple of weeks ago in preparation for today’s post. What’s so special about today’s post, you ask? These cookies were created for Nikki’s blog over at Chef in Training. I’ve recently become a monthly contributor to her site and feel so honored to do so.

Which is precisely why this post will be short and sweet – much like these cookies. They are packed with melted chocolate, dark cocoa powder and big chunks of chocolate. The addition of creamy peanut butter and Reese’s Pieces was out of pure necessity, of course :). And they are pretty short-lived… seriously, I’d be surprised if these lasted more than a couple of hours in your house. If they do, please tell me your secret for self-control, ha!

Thick, soft and chewy. Just how I like my cookies. Guys, I promise you this recipe will be worth checking out. Seven Layer Neapolitan Cookies

Seven Layer Cookies are made up of stacked almond cakes, apricot preserves and enveloped by two layers of chocolate coating. There’s nothing average about these cookies. Get ready to be wowed.

I had no intention of making two desserts that involve seven layers in a row. None whatsoever. And it didn’t really dawn on me that I had done so until I took a look at my pictures this week.

I hope you don’t mind. If there’s anything that can beat a regular cookie, it must be one that consists of seven layers.

Seven extremely delicious layers to be exact.

When I found out that these cookies are made up of cakes, I could hardly contain my excitement. Any day that I get to combine two desserts, i.e. cookies and cake into one, is a major win in my books.

I don’t know about you, but I am always so impressed when I see layer cakes and imagine the amount of work that must have gone into creating them. Which is precisely why I had never attempted anything in that arena.

Oh wait, there was that one time when I tried making checkerboard cookies with the help of my brother-in-law and failed miserably. It was around Christmas time, I had just married into the family and all I wanted to do was show off my housewife skills.

Almost six years later, I finally decided to redeem myself.

Seven Layer Bars

One of my all-time favorite cookie bars. It’s hard not to love a bar with a beautiful graham cracker crust, seven layers and sweetened condensed milk.

Hi there! Did you have a good weekend? Around these parts, we enjoyed spending time with family, eating good food and celebrating Easter, of course. I always look forward to Sunday Morning. There’s nothing like getting ready for church, eating a special breakfast and attending worship at our church.

Needless to say, Easter is really close to my heart. I had the opportunity to sing in our church choir this past weekend, and watching countless hands being lifted up while singing songs to God never gets old. I still get goosebumps just thinking about it. Since worship was so sweet and fulfilling, I figured dessert needed to follow suit.

Whew. How did it get to be Monday already and how in the world are we in the middle of April? Is it just me or have the last couple of weeks been flying by?

Like I mentioned on Friday, we attended a family get-together for Easter this past weekend and somehow started planning our summer. Lots of fun activities and mini vacations are in the work – it’s bound to be an eventful summer this year! I’ve already grilled dinner almost every night last week and had my first frozen yoghurt with a dear friend on Saturday. To say I’m excited about everything this warm weather has to offer would be an understatement.

Let’s not mention that it began to snow as we were headed home last night. I am choosing to ignore the temporary dip in temperature at this point. Warm weather HAS to be inevitable!

Samoa Mug Cake

So I finally jumped on the girl scout cookie train. I have certainly not missed the fact that the cutest little girls are out and about selling their well-loved cookies. Until two days ago, I had successfully avoided the purchase of said cookies. Not because I don’t support the girl scouts, but mainly because I know what serious damage we’ll inflict on those cookies once they enter our home.

With the temperatures climbing to a balmy 45 degrees on Monday, little girls were stationed at pretty much every grocery store entrance. There was no escaping, lol. Needless to say, I proceeded to purchase our favorite variety from one of our friends’ daughter. Most people are either on the Thin Mint or Samoa side. I even heard people say that you can’t be on both. That it’s impossible. I beg to differ. I refuse to choose between one or the other.
