On my way to work the other day, I saw a sign advertising a visit to New Orleans during Mardi Gras. It captured my attention instantly because I’ve always wanted to go. Yeah, I guess I’m a marketer’s dream. But apart from the well-designed billboard, my longing to visit New Orleans started to well up yet again. It steadily holds #1 on my list of places to go.

It all started two years ago when my husband and I planned a trip to Louisiana. I had done my research and had completely fallen in love as I planned our agenda of things to do and places to eat. Days before our scheduled departure, my husband fell ill and we sadly had to cancel our much anticipated trip to the south.

As I was thinking about that trip once again, I decided that I had waited long enough for fresh beignets (one of the things I was dying to try). It was time I made my own homemade version.

These cookie bars are a first for me. When I opened my cabinets last weekend, I was met with leftover baking chips in pretty much any variety. Lots of small quantities that I wanted to use up. Cookies were the first thing that popped into my mind, but I was running short on time and needed a one-pan dessert recipe that required little cleanup. So I started to think about my regular chocolate chip cookie recipe and decided to turn them into bars.

No idea why I never thought about doing that before. I mean, it’s like one giant cookie and you get to decide how big your piece is. Pretty much the best thing ever.

Chocolaty Peanut Butter Truffles

So, I keep a list of recipes I want to make and publish on the blog. Over the last couple of months it has gotten quite a bit longer as you might imagine. It’s saved on my computer and everything is neatly organized, but I rarely take a look at it. The funny thing is that I have 3 additional lists laying all over our house – one in our silverware drawer, the second one next to my bed (you won’t believe how many recipes you see here were developed in the middle of the night. There a quite a few nights during which I toss and turn and finally decide to write things down, just so I can go to sleep), and the third one is taped to my laptop. A good old post-it note that has around 20 recipes on it. It’s anything but pretty, but I wouldn’t have it any other way. One thing a computer can’t give me is the satisfaction of crossing things off that list.

As I completed all recipes on my last note and was about to throw it away, my eyes caught a glimpse of “peanut butter truffles”. I quickly unfolded it and sure enough, I had missed one recipe. As I sat starring at it in disbelief, I knew the only cure was to get up and start rolling.

Swirled No-Bake Reese’s Peanut Butter Bars

So, this happened.

Here’s how: after drinking 3 large cups of tea (with the help of my new Keurig – love that thing), trying to concentrate on reading and keeping myself occupied with housework, I was no longer able to resist the urge of entering my kitchen to whip up something containing loads and loads of peanut butter. It goes without saying that chocolate had to be part of the cast of characters because you never separate best friends. Peanut Butter & Chocolate = BFF.

You see, I was avoiding our kitchen all morning because I knew that me being trapped in the house with a pan of these bars could cause major damage. To my waistline, thank you very much, MN Snow/Frozen Tundra Day. The fact that these bars take almost no time to make or work to prepare, wasn’t helping my case. I was left with no excuse why I had to stock up on calories after working so very hard in the kitchen. But yeah, I still could not be deterred from eating an undisclosed amount of these.

Chewy Salted Caramels

Thanksgiving Eve is here. I’ve always loved the Eve of any holiday or special occasion. The anticipation for what’s in store the following day feels so magical to me. Getting together with family, enjoying good food and just taking it all in is worth getting excited for. You probably have your Thanksgiving Day menu planned by now and are ready for the big day. If you feel like adding something sweet, these Chewy Salted Caramels should definitely be it. Even if you’re already set for the main meal, you may be looking for something fun to do on this long weekend. These caramels fit the bill just right. I mean, chewy, salted, and caramel. Do I really need to say more to convince you to make these? Yeah, didn’t think so.
