Itty Bitty Cinnamon Rolls

 A miniature version of cinnamon rolls that requires no yeast, needs only 4 ingredients and is ready in under 20 minutes. These really couldn’t be easier. One of the best recipes of all time.

Hey, hey! Did you have a great holiday weekend? Ours was a true whirlwind – complete with amazing BBQ, bonfire, beautiful fireworks, a breathtaking wedding and date day with the love of my life. It was busy, but I wouldn’t have changed a thing. The big smile on my face says it all ;).

I had the best intentions of posting a healthy and light recipe today. The Monday after the 4th of July sort of calls for some lighter faire, doesn’t it? But I have two words for you: Cinnamon Rolls. I don’t think there’s ever a wrong time to talk about, make and eat cinnamon rolls. They are hands down my favorite breakfast food in the whole wide world.

Even though there’s no red, white, and blue going on here, these truffles would be a fabulous addition to your 4th of July grill-out. Although, they taste just as delicious the remaining 364 days of the year. I am pretty sure these yummies will make a regular appearance for us from now on.

Doesn’t Orange Creamsicle just scream summer? As some of you might know, I am a huge fan of truffles and thought that I had to wait until the weather cooled down to come up with new creations. But since patience is not my strong suit and because truffles are a no-bake treat, I was determined to find a version fit for summer.

I especially loved eating these truffles straight out of the freezer. Instant memories of creamsicle pops jumped into my head. It’s just like eating a popsicle in bite-sized form. So I finally jumped on the girl scout cookie train. I have certainly not missed the fact that the cutest little girls are out and about selling their well-loved cookies. Until two days ago, I had successfully avoided the purchase of said cookies. Not because I don’t support the girl scouts, but mainly because I know what serious damage we’ll inflict on those cookies once they enter our home.

I hope you’re hungry today. These brownies require a healthy appetite coupled with an incredible craving for chocolate and peanut butter. All I’ve been wanting to eat the last couple of days have been tomato soup and brownies. Odd? I think not. It makes perfect sense to me. These two things are what comfort food is all about. And believe me, we are in need of massive quantities of comfort and positive thoughts during yet another snow storm, scheduled to arrive tomorrow.

Not only do I feel like I’ve earned the right to replenish my burned calories of snow shoveling with sweet treats, but I’ve been enjoying this winter in regards to what it’s done to my creativity in the kitchen. Some of the best desserts have emerged as a result of being snowed in all day. These brownies are definitely part of that group!

Chocolate Covered PB Cracker Sandwiches

Sometimes a long title is indispensable when describing a mouthwatering sensation. I really had no idea what to call these. Too good to be true? Yes, that one came in as a close second. I went for the obvious. Listing every. single. ingredient. In other words chocolate, peanut butter and crackers. The likelihood that you have all of these already on hand is pretty high. I did and had no idea what deliciousness these 3 could produce. No recipe was needed. I had seen pictures and figured they didn’t need much instruction – my sweet tooth took the lead.

It was love at first bite. There’s no question that these sweet sandwiches will make a yearly appearance from now on. I was in pure peanut butter and chocolate bliss. The salt from the crackers goes with the whole salted chocolate trend and couldn’t be more up my ally. So, so swoon-worthy!
