There’s a different story to every recipe I post. Some are family favorites waiting for future generations to be enjoyed, others are inventions I literally dreamed up over night, and a few happen to be complete accidents. Thus is the case with today’s cookie recipe. What should have been a quick and simple breakfast turned into experimenting and eventually resulted in me stuffing my face with cookies first thing in the morning. Happy accidents like this one is what I consider winning.
But it is no accident that you find my very favorite foods that I reach for on a regular basis in these cookies. Blueberries and raspberries have and probably always will be my go-to berries of all time. There’s yogurt in place of eggs & butter. I even substituted some of the flour with extra crunchy granola. I never thought that I could become obsessed with granola. Not only am I not a breakfast girl (though I’m slowly turning into one), but I especially don’t understand the obsession with cereal. It’s time for the weekend, everyone! Do you have anything fun planned? I think we’re ready to soak in the beautiful weather and let the sun do its magic. It sure is nice to feel the warmth and see the ground again (even though there’s not much to look at except for dead grass, ha). In preparation for our outdoor adventures this weekend, I started to get all sorts of ideas for snacks on the go that are wholesome and keep you fueled for physical exercise.
Granola Bars were the first thing that popped into my head. Not surprising since they are the snack of choice for Adam and me. Those little bars always seem to satisfy and are just the right amount to hold me over in the afternoon or when I’m feeling a bit peckish whilst on a hike or after a run.

Let’s jump right in, shall we? I have caught the granola-making bug. If you’d asked me a couple of weeks ago, I wouldn’t have considered myself a huge granola fan. I never quite understood the hype and wasn’t even remotely interested. I think the fact that breakfasts used to be more of an afterthought (if even that) to me, might the biggest reason why I just didn’t get granola.
But in my attempts to give the most important meal of the day more attention, I decided to jazz up my Greek yogurt breakfasts with some delicious whole grains. So off I went and purchased a bag of honey almond granola. It didn’t take me very long to consume every last crumb…
And refusing to purchase yet another bag, I decided to make my own. You know, being a food blogger and all. Plus, wanting to be in control of my ingredients and creating granola just the way I like it, gave me more than enough motivation.
