Baked Oatmeal that will easily feed the whole family all at once. This delicious casserole is not only quick and convenient, but healthy too. You will be off to a great start!
Hey there! I hope you’re enjoying the last day of the long holiday weekend today. We have had the most wonderful weather so far. And by wonderful I mean hot, humid and sunny.
On Saturday, we braved the MN State Fair and tried everything on a stick you can possibly imagine. You’d think that since I am into everything baked and sweet, my favorite thing to eat at the fair would be a yummy treat, but it ain’t so. The one thing I look forward to the most are the pork chops on a stick. I am fully aware how that must sound, especially coming from me, but they simply can’t be beat. The smell of the chops grilling away, the special seasoning, and the way that they’re always cooked to perfection… it’s a carnivore’s dream, really.
So let’s move on to the complete opposite. Healthy breakfasts.
Oatmeal, peanut butter and chocolate (I promise this is good for you). The three main ingredients that make this breakfast bake something that your family will request over and over again. Because it secretly feels like you’re eating dessert first thing in the morning. And who doesn’t love that feeling? Continue reading →
One of our favorite good-for-you desserts. Juicy figs, a silky cream cheese layer, and a nutty base. You’d never guess this is healthy even in the slightest!
If you’d asked me two years ago if I would ever make a recipe using figs, you would have heard a resounding no from me. I was beyond intimidated by this gorgeous fruit. Even though they’re pretty to look at and have intrigue written all over them, I couldn’t bring myself to picking up a few. And then Costco happened on a Monday morning. Proudly displaying case upon case of the most gorgeous figs I’d ever laid eyes on. Just like that I grabbed a case, made my way to the register, and started this figgy relationship.
Things quickly got serious. I found myself going back for just one more all day long. I don’t even care to admit that I’m completely and totally addicted. And I suppose I have this little blog to thank for that. It’s the one thing that pushes me to try new things, invent new recipes, celebrate the classics, and keeps my life more interesting and exciting than I could have ever dreamed. Which also means that I have to thank you. Because none of this would happen or could be possible without you. Cheesy, but oh so true.
So I hope you indulge me for another couple of minutes as I share with you my new fig obsession. I have a feeling you’ll really like this one. Continue reading →
I do not have favorites when it comes to cookies. Yes, I am not a big fan of dry or even crispy cookies, but generally speaking, I could never choose. There are just too many great cookie recipes in my life. Not that I’m complaining or anything.
But I was lacking a chocolaty cookie recipe in my collection that left such a big hole, it was basically begging to be filled. And I happily got to work.
Since our cookie consumption can be quite high (just take a peak at my recipe page and have a look through all the cookies I’ve shared over the years), healthy cookies have become a must in our cookie jar.
You guys know that I’m all about variety and easily get bored. Which is why I am beyond thrilled with the fact that I now have 2 healthy options to indulge in that taste anything but. THRILLED! Continue reading →
Homemade Granola made healthy with Coconut Oil, sweetened with Honey, and tossed with Almonds. Get your day off to a great start with this breakfast favorite.
I never thought that I could become obsessed with granola. Not only am I not a breakfast girl (though I’m slowly turning into one), but I especially don’t understand the obsession with cereal. Now cereal makes a great snack if eaten dry, but the addition of milk that turns it into a soft and soggy mess… no, thank you.
That’s exactly where granola comes into play.
Whether I pour milk into my bowl of granola, add it to yogurt, or swirl into my oatmeal, this clustery granola maintains its crunch and overall loveliness. It also makes for a great snack any time of day! Love the versatility. Continue reading →
A Chocolate Peanut Butter Shake that’s healthy?! Yes, yes indeed.
Hands up for thick, rich, creamy, and just the right mix between chocolate and peanut butter. Skip the drive-thru and enjoy a “milkshake” that you can be proud of and will leave you feeling beyond fantastic.
Today’s concoction is the perfect example of breakfast, lunch or even dinner in a pinch. That’s how filling and satisfying this milkshake is. You could, of course, sip on it post-workout as well. And by making one simple addition you can totally amp up the protein in this shake.
I don’t know about you, but I usually don’t care for protein powder. The taste, texture (grittiness, to be exact), and flavor is something I’ve never gotten quite used to. And yes, I’ve tried many different kinds. But blended into this amazing shake, you get all the benefits you want from protein powder but without any of the negative affects.
Whether you decide to add protein powder or not, this shake is equally as delicious. Continue reading →
