Caramel Apples at last. Getting to the point of holding a perfect caramel apple in my hand was quite the ordeal. Batch number 1 involved burned caramel (always use a thermometer) and standing on my chair whilst waving a towel at my smoke detector. Our kitties were less than amused and neither was I.
The second batch decided to turn into a grainy mess and started to slip right off of my apples. Frustration levels were high. Very high.

And even though it might seem a bit more involved than other recipes out there, it actually was quite simple, easy, and fairly quick. Who would have thought?

I know it’s summer and all, which means we’re all craving refreshing drinks, lighter meals, and love to use the grill as much as possible. Am I right? But no matter what season we’re in, I still find myself wanting comfort food every now and again. Chocolate pudding definitely qualifies as comfort food for me. Just the thought of it brings back so many memories of my childhood and stirs up just as many happy feelings. I really don’t make it often enough.
It turns out that having chocolate pudding on an 80 degree day on your back porch is actually quite perfect. Chilled pudding with a super smooth and creamy texture is now one of my favorite summer treats. I had no idea how much I’d enjoy a treat I usually only make come fall or winter. Better late than never.

Welcome back, everyone! I hope you had the most amazing weekend. I certainly did. Saturday morning one of my dearest friends and I hit up the big mall, aka the Mall of America, and did some serious damage. We arrived just shortly after 12 PM and left at around 10 PM. That’s right – 10 hours later we finally got back in our car and just wanted to crash right then and there. It was also my very first time to watch the various shops close and some lights being turned off. But I wouldn’t have done it any other way. On the way home we talked about how blessed we are that we’re exhausted from shopping. Which is the best kind of exhaustion, btw.
Sunday morning was all about church and family. The way it should be, especially on Easter Sunday. This is actually the first year that I didn’t purchase any kind of Easter candy for Adam and I. Given that today is the day after Easter, I might have to hit up Target and see what I can snag :).

Happy Monday Morning! I hope everyone had a great weekend. Besides the fact that the Packers lost their game last night (sniff), we had a wonderful time. The weather has been absolutely beautiful and even somewhat warm the last couple of days. Mid 30’s, lots of sunshine and blue skies seem to bring out lots of smiles. We take anything we can get this time of year and soak up as much of the “warm” breeze as possible, ha.
But I still managed to make some time in the kitchen. For an idea I’ve had swirling around my head for what seems like forever now.
As if bagel bites stuffed with cream cheese weren’t enough, I decided to add Cinnamon Toast Crunch (aka my favorite childhood cereal) to the mix. Literally. Cereal makes up part of the bagel dough, which you can taste with every bite. If that’s not a dream come true, then I don’t know what is.
