Glazed Lemon Pudding Cake

Lemons have stolen my heart and I don’t care who knows it. I always have an abundance of lemons in my kitchen. I regularly drink a glass of water with half of a freshly squeezed lemon first thing in the morning. So I constantly stock up on lemons and sometimes happen to buy just a couple too many. Which I don’t mind at all ;). Because it results in delicious cakes like the one you see here.

I actually spotted the recipe for this cake a little while ago and have been waiting for just the right moment to whip it up. When the lemons started to accumulate, I took it as a sign and finally gave it a go.

You might know by now that I’m all about moist cakes. I can’t stand dry and flavorless cakes, which are two things this one does not have. The addition of pudding is basically the best thing ever. Every time I sneak another slice, I am dying just a little bit inside. I almost can’t handle the goodness. [Read more…]

So if you’ve been waiting for a non-chocolaty dessert, this one is for you. Never did it cross my mind that I’d be willing to sacrifice chocolate over something fruity and sour like lemons. If you would have told me that a lemon dessert is about to steal the show this Valentine’s Day, I would have made a very bitter face at ya.

Being proven wrong is a beautiful thing in this case. [Read more…]

One thing I always crave during the warmer months of the year is fresh berries. I love, love, love them. No matter what kind, I could devour them all. Raspberries, however, hold a special place in my heart. My mother-in-law has the best raspberry bushes and every year, we get to pick as many as we like and besides eating as many as we possibly can, I always end up making jelly. Never did it cross my mind to freeze some fresh berries so I could make um, Raspberry Sweet Rolls, for example. It boggles my mind that I have failed in that department. But I didn’t let that deter me. So to the grocery store I went. Lesson learned and with frozen raspberries in hand, I set out to make these amazing rolls. [Read more…]
