Things are getting so close, you guys. It feels absolutely wonderful to say that Christmas is this week. And I am so ready. Especially for the food. To be quite honest though, it has felt like Christmas Day almost every day for the last week or so. Given all the delicious treats that came out of our kitchen, we’ve definitely been spoiled. And this past weekend was no exception. On Saturday morning I started thinking about what I would like to eat on the morning of the big day and pancakes were the one thing that the hubby and I wanted. But I couldn’t whip up just any old pancakes.
This miniature version of our breakfast favorite may be the only way I’ll eat pancakes from now on. You can devour an entire stack in one bite. How satisfying and mouthwatering does that sound?

Yay for Friday! Are you ready to conclude another work week and enjoy the weekend? Of course you are ;). This week went by super fast for me. Don’t really know why, but when I realized today is Friday, I was sort of stopped in my tracks.

But I’m not going to lie, some days I am more excited ab0ut sharing a recipe than others. Not because of the quality of the recipe (I seriously love them all and wouldn’t be sharing them if I didn’t), but whenever I get to click publish on a recipe that brings back memories or that helped me conquer a kitchen challenge (and therefore creating a memory), I have a hard time hiding my excitement. I’ve got a great recipe for you today. It is one that I have been wanting to share with you for quite a while now. It is also the first recipe I ever created. I was really nervous and didn’t know if it was going to turn out the way I had hoped, and to my surprise, it totally did. It was a thrilling feeling and I hope ya’ll will love them just as much as I do. Not only are they a great afternoon snack or dessert, but they also make for a yummy breakfast. I ended up sharing ours with new neighbors that had just moved into the neighborhood and I am pretty sure they were a great hit.
