Hey there! I hope you’re enjoying the last day of the long holiday weekend today. We have had the most wonderful weather so far. And by wonderful I mean hot, humid and sunny.
On Saturday, we braved the MN State Fair and tried everything on a stick you can possibly imagine. You’d think that since I am into everything baked and sweet, my favorite thing to eat at the fair would be a yummy treat, but it ain’t so. The one thing I look forward to the most are the pork chops on a stick. I am fully aware how that must sound, especially coming from me, but they simply can’t be beat. The smell of the chops grilling away, the special seasoning, and the way that they’re always cooked to perfection… it’s a carnivore’s dream, really.

Hi Everyone! Am I posting a recipe on a Thursday? Yes, it’s happening. I’m so sorry to anyone who loves routine (just like me) and has been thrown off by my posting schedule lately. As you can see, I have a new recipe for you today and another one coming tomorrow. I’ll be returning to my regular schedule (Monday, Wednesday, Friday) next week. Just thought I’d fill you in ;).
The wait for today’s recipe was well worth it though. Ever since making these cookies, I have been on pins and needles to finally fill you all in. Because Peanut Butter Cup Cookies should be shared with as many people as possible. They’re are incredible.
The best part is that they’re also gluten-free. Judging from the amount of comments and questions I get to come up with a gluten-free cookie recipe, I know that there are quite a few of you that will be excited about this one. I baked, tested and finally came out with a winner. It took me a while to get the cookies just right. Achieving the same taste and texture of “regular” chocolate chip cookies was my goal. Healthy snacks are pretty much an essential in our home. Adam and I have always eaten smaller meals throughout the day with a couple of snacks here and there. Not only do I like to make my own snacks, but I’ve really been concentrating on making healthy yet satisfying ones over the last couple of months. We’re still getting settled into our new home and have just a few projects (that require quite a bit of muscle work) left. So I decided to stock up our “good for you” options that’ll provide us with plenty of energy.
