Cream Cheese Drizzled Pumpkin and Cookie Butter Bars

All I wanted were thick, moist, and drool-inducing bars that screamed fall to me. Pumpkin as one of the main ingredients was a must – no explanation needed. As I looked through the pantry my hand automatically reached out and grabbed the cookie butter jar. Once I opened the lid and smelled the wonderfulness that is cookie butter, I knew the flavors would work extremely well with pumpkin. I mean, cookie butter is basically made out of cookies and you can never ever go wrong with adding cookies to a dessert recipe. It’s a guaranteed winner!

The addition of semisweet chocolate chips, a yummy cream cheese drizzle, and extra cookie crumbs were always a given. There’s no such thing as a good pumpkin bar without cream cheese in one way or another. At least in my recipe book, ha.

It had been way too long since my last scone recipe. Upon realizing that scones haven’t been made since moving into our new house earlier this year, I immediately felt the need to get in the kitchen and steep a cup of hot tea as well. Even though I do not look forward to the colder days ahead, I can’t deny the fact that hot tea and a freshly baked treat taste better on slightly cool and comfy afternoons.

Welcome to another week! Did you have a good weekend? Mine is pretty much summarized by these cookies. Cookies are my ultimate comfort food, especially when they come with plenty of chocolate chips, caramel and the awesomeness of pumpkin. I worked hard on these, friends.

I have had my fair share of cakey pumpkin cookies, which isn’t necessarily a negative thing. While they can be just as delicious, I wanted a pumpkin cookie that tastes just like a cookie should. Complete with crispy edges, ultimate chewiness and zero disappointment.

And after perfecting THE pumpkin cookie recipe, I couldn’t help but add ooey gooey caramel to each one. I thought it couldn’t get much better, but the addition of caramel definitely stepped things up.

Happy October 1st. Fall is in full swing and there’s nothing I love more than to snuggle up, sip on a warm beverage and snack on something yummy. Preferably while holding a piggy. Say what? I shared yesterday in this post that Adam and I adopted two baby guinea pigs. It really was a spur of the moment decision. Somehow we ended up at a pet store on a Friday night and before we knew it, we were holding two piggies. Once we held them, there was no turning back. Pippa and Pippin had found a new home!

I had no idea that guinea pigs are fruit and vegetable fanatics. More vegetable than fruit, really. Watching them chowing down on peppers, carrots, kale, and cucumbers has really inspired me to do the same. I am not kidding – when you watch them get so excited about their “treats” that they can’t help but run around in circles in their cage, I start reaching for carrots without even knowing it. Need to add more veggies to your diet? Get a guinea pig or two ;).

While I love vegetables, there is something else that has me skipping with joy around our house. 3 words: Pumpkin Coffee Cake. Continue reading

This is my first actual fall post now that autumn has officially arrived and things are definitely beginning to look like it. The leaves are changing color and I cannot wait to see fall in all its bounty. Though this season tends to be rather short in MN, it sure makes up for it in radiance and breathtaking beauty. Definitely one of the reasons why living here is so worth it.

Also, I feel much more comfortable talking and thinking about all things cozy and warm when we’re in the season. It just feels right.
