Recently, I found myself digging through my baking pantry and discovered a container of chocolate covered espresso beans. Pretty sure I purchased those on a whim one day in Trader Joe’s and decided to hide them from myself. Burying the container amidst large bags of flour, sugar, and everything else you could possibly need to satisfy your baking addiction. Because I cannot be trusted around them.

Welcome back, everyone. Did you have a good weekend? We attended number 1 out of 4 graduations this past weekend. Celebrating my brother-in-law’s achievement of becoming a graduate student and moving on to the next chapter in his life.

During the ride to Kansas and even on our way back, I was certainly dreaming of the frozen drink I’d made just a couple of hours before. Friday’s recipe inspired me so much that I couldn’t let the caramel-chocolate-pretzel combo go. I was having too much fun playing around with some of my favorite flavors when it comes to all things sweet.

It has recently come to my attention that Blondies have suffered some serious neglect in the Deliciously Yum household lately. Which is such a shame given the fact that they are one of our favorite treats to enjoy. Mostly because they’re so versatile and can be switched up in many different ways. Once you find a perfect base recipe, all options are open to you. It’s one of those recipes that don’t require a lot of ingredients to prepare, can be made in one bowl (yay for minimal cleanup), and loves to showcase the add-ins you choose or the leftovers you’re looking to use up, hehe.

Here I was thinking that I don’t do pretty swirls on cupcakes. Have you noticed the absence of cupcakes on this blog of mine? Yes? Because I did too. Pretty sure I waited for the right moment, flavor and enough courage to try to pipe frosting beautifully on top of each mini cake. Most of you know by now that patience is not my strong suit. Making the frosting or buttercream is one thing, but I was seriously dreading the process that inevitably would follow next. The fact that I’d never tried my hand at decorating cupcakes this way before didn’t help either.

Salted Caramel & Chocolate Filled Thumbprint Cookies

And so another fun weekend comes to an end. Between spending most of our time with friends and family all weekend long (it doesn’t get much better than that), my hubby found a couple of hours to put up our Christmas lights outside. We usually try to get that checked off of our list before the first snow fall, but weren’t quick enough this time around. Yep, it happened. Earlier last week we received quite a few inches of the white stuff and our surroundings looked and felt like a winter wonderland.

So naturally I couldn’t help but listen to Christmas tunes all week long. Can you blame me?! Saturday morning was no exception. And while my husband was installing our lights, the noise he made reminded me and our kitties of someone else who likes to make a serious clatter on roofs towards the end of December… and out of the sudden I felt the need to whip up a batch of cookies.
