Salted Caramel Apple Stuffed Chocolate Crumb Muffins

Welcome back, everyone. Are you ready for the first fall weekend of the year? Do you have anything fun planned?

Adam and I were planning on hitting the trails at a State Park in northern Minnesota this weekend to take in the fall foliage, but it looks like we’ll be waiting another week or so. Because the weather through all of September has been absolutely beautiful here. Warm, sunny and picture-perfect, really. One wouldn’t even know fall has officially arrived by walking outside. I can’t remember leaving the house in a t-shirt and shorts this late in September since like forever. While we’re anxiously awaiting the fall colors to arrive, I am more than happy to spend yet another weekend soaking in the sun and pretending that summer is never going to end.

Yes, I adore all things summer, but that doesn’t mean that I am not craving the best fall has to offer. Pumpkin spice lattes (Dunkin Donuts’ are the bomb), fall-scented candles, layering clothes and wearing boots, fresh apples and pumpkins… I could go on and on. Oh, and don’t forget about the food. Comforting, hearty, warm and oh so satisfying.

To be honest, I’ve been dreaming of the amazing food creations for months now. The muffins you see here were swirling around my head for so long – I’m BEYOND pumped to finally get to share them with you today! Continue reading

Chocolate Dipped Microwave Caramels

Homemade Caramels that only take 7 minutes to make from start to finish! You won’t believe how easy they are.

microwave-caramels Welcome to the first day of August. I can hardly believe I just typed those words. Let’s just say I’m glad we’re talking about the start of another summer month instead of a colder alternative.

So I’m going to be honest. Caramels aren’t the first thing that comes to my mind when I think of summer. Thermometer, lower temperatures (aka no humidity), and patience are some of the things I associate with caramel-making. Now don’t get me wrong, homemade caramels prepared the traditional way is one of my favorite things to do. I get excited every fall when the conditions are just right and we get to enjoy some caramelly goodness again.

microwave-caramels It turns out there’s another way to make caramels. And it’s with the help of your microwave. Who would have thought?

Now there’s no more waiting for anything. You can prepare homemade caramels anytime of the year in about 7 minutes. Best discovery ever? Yes, yes it is. Continue reading

Let’s tackle another Monday, shall we? But before we do, can we dwell on the weekend a little while longer and pretend it’s not yet time to get back to reality? Good.

As usual, the weekend went by way to fast. Not only was mine packed with a fun freelance project I’ll tell you about later, but getting to hang out with some of our fabulous friends, chatting it up and playing board games, was another highlight. Nothing says Midwest like a good old game night and a delicious hot dish (also known as casserole, ha).

Or is that a national thing? Either way, I am fairly certain that I know one thing that unites us all. Cookies are understood and loved nationwide, if not worldwide.

They’re also my way of extending the weekend and dwelling on the fun memories one scrumptious bite at a time. Let’s forget about Mondays together. Continue reading
