Oh, how I love a good smoothie. When we find ourselves in the midst of summer (or just about) all I want is a fabulous smoothie and homemade sweet tea. If one could live on those two alone, I absolutely would. Years ago I made up my own sweet tea recipe and now I make several pitchers every week. I wouldn’t change a thing and can confidently say that it’s my favorite drink of all time. Smoothies, on the other hand, are a different story.

We’ve made it. Friday’s here and the weekend is only a few short hours away. I thought I’d take it upon myself to plan tomorrow’s breakfast/brunch for you. If you love scones, strawberries and a luscious sweet glaze, that is. Ever since perfecting my scone recipe a few weeks back, I knew I needed to explore further options and see where I could take the recipe. After being thrilled to see fresh strawberries all over my local grocery store at the beginning of the week, I immediately took inspiration and started to dream about soft, buttery and amazingly mouthwatering scones. Filled with lots and lots of strawberries.

I guess Spring is all about fruit for me, especially berries. It’s been extremely dreary out with lots of rain pretty much all of this week. The bright pops of color cheer me up and remind me that sunshine and brighter days are ahead… or at least I hope they are. And don’t even get me started on the glaze I whipped up for the scones. Strawberry Twists

And so it continues. My breakfast obsession cannot be stopped, you guys – I hope you don’t mind ;). Since we’re in the middle of winter, I’ve been craving some color and fruit in my life. The grocery stores are filled with the most amazing citrus fruits right now, which is seriously holding me over until we have a bigger selection of fresh fruits and veggies around once again. As for now, I am totally relying on the produce I froze over the summer, knowing that I would be beyond happy I took the time to stock my freezer once the cold days set in. And am I ever.

Strawberries were begging to be used over the weekend and they didn’t have to twist my arm to make it into today’s recipe. I instantly knew that the homemade strawberry filling combined with the sweet dough would be a winner. I mean, how could one go wrong with that combo?

As soon as these came out of the oven, Adam volunteered to “assist” while I took these pictures. I was under some serious pressure to take these shots as quickly as humanly possible. We had some devouring to do!

Dreamy Strawberry Coconut Bars

Happy Wednesday, you guys. How about some yummy bars today? Since I apparently can’t get enough of berries and coconut, I just had to combine the two into one tasty treat. That’s what summer will do to me :).

I hope you’re on board with my current obsession because I can’t see an end in sight. There’s something about the beautiful weather that makes me go crazy for anything containing the naturally sweet taste of berries.

Not only do I love the combination going on here, but the fact that these are super light and therefore easy to devour, makes for one dreamy dessert.

My husband is the one who actually inspired these bars. Believe it or not, he isn’t the biggest chocolate fan and would go for anything containing fruit instead. I know – it’s pretty crazy, huh? And he loves my homemade jelly that I make and freeze every year for us to savor until strawberry season comes around again. And that’s exactly what I used for the middle layer in these – strawberry jelly. Mmmmm. You could totally swap out jam or any other fruit preserves you prefer, of course.
