Welcome to another Monday! I hope you all had a wonderful weekend. Mine can basically be summed up by these pictures. Celebrating Mother’s Day was the main event, of course. After making these tarts a couple of weeks ago, I knew it wouldn’t be long before they’d make their appearance once again. Being inspired by individual desserts, the giant pack of Costco’s strawberries in my fridge, chocolate, and Friday’s smoothie, I knew exactly what to whip up for Sunday’s occasion.

Trio of Mini Cheesecakes (Dairy-Free)

No-bake Mini Cheesecakes made without dairy. This recipe features a classic graham cracker crust, has the most amazing “cream cheese” filling and is finished with three wonderful toppings.

A couple of weeks ago I challenged myself to find a recipe for dairy-free cheesecake. I probably mentioned before that my husband has developed an intolerance against lactose. Recipes that contain small amounts of butter or even chocolate, usually go over fine. I have found that substituting almond milk for regular milk works extremely well in most recipes, too.

But I was sort of stumped when it came to cream cheese and had made a mental note that cheesecake would probably not be in our future again. But since I like a challenge and don’t give up easily, I changed my mind and was determined to figure this one out.

Also, I wowed that I would never put anything on this little blog of mine if it didn’t taste absolutely delicious. Good thing I live with one of the most amazing food critics. Adam is somewhat of a picky eater and yes, sneaking in vegetables and other “weird” things has become part of my regular routine, ha.

With Girl Scout Cookie Season right around the corner, I thought I’d get a head start by making my own. Well, these are semi-homemade. And for good reason. Some things can never be replicated. Simply because the iconic taste of something we truly love and are used to is really hard to reproduce. If you call something a copycat version it better be pretty close to the real thing. Know what I mean? It’s the worst when somebody promises you something that tastes just like the real deal only to be negatively surprised. To say I was a bit skeptic about making these cookies would be an understatement.

But I had full confidence in my ingredients. I wasn’t going to play with making my own dough and cutting out a million tiny circles (not that I mind), only to be disappointed when it comes to the taste factor. I figured that no matter what these turned out to taste like, they would undoubtedly be delicious since the starring ingredients are all lovely on their own.

And were they ever. Not only did they hold up to what I had envisioned, but they tasted exactly like the original Thin Mints. I was floored and have had the hardest time keeping them from you. No more stocking up on box after box and stretching your patience until you’re able to get your hands on another box, Thin Mint Season consists of 365 days from now on. [Read more…]

If you’ve been following my blog for any amount of time, you are fully aware how much I adore baking, sweet treats and indulgent foods. While there won’t be a shortage of these posts in our near future, today I’ve been wanting to share a smoothie that’s not only good for you but also tastes amazing. You would never know that this stuff is healthy. You are probably as suspicious as I was about somebody telling you that this extremely green drink, which practically screams vegetables, doesn’t taste anything like leafy greens or raw produce. Vegetable avoiders can breathe a sigh of relief. I count myself among you, friends. Let’s take a closer look, shall we?

Tomato Soup with Grilled Cheese Croutons

Football Season is finally here. Yay! When we woke up yesterday (Sunday) morning, we could hardly wait until kickoff. Promptly at 3:25 with our jerseys on and fantasy football apps open, we were ready to cheer on the Green Bay Packers. Go, Pack, Go! It was a pretty heated game and even though we lost, it gave us a great taste of what’s to come for the rest of the season; it also reminded me of Homemade Tomato Soup with Grilled Cheese Croutons. I had seen variations of tomato soup with these cute croutons all over Pinterest a couple months back and I couldn’t wait to make it myself. Tomato Soup also happens to be my favorite soup of all time. So you better believe this one will tickle your taste buds.
