Ever since making my Unbelievably Healthy Chocolate Chip Cookies a couple months back, I knew that I wanted to try my hand at a better-for-you Double Chocolate Cookie recipe.

I do not have favorites when it comes to cookies. Yes, I am not a big fan of dry or even crispy cookies, but generally speaking, I could never choose. There are just too many great cookie recipes in my life. Not that I’m complaining or anything.

But I was lacking a chocolaty cookie recipe in my collection that left such a big hole, it was basically begging to be filled. And I happily got to work.

Since our cookie consumption can be quite high (just take a peak at my recipe page and have a look through all the cookies I’ve shared over the years), healthy cookies have become a must in our cookie jar.

You guys know that I’m all about variety and easily get bored. Which is why I am beyond thrilled with the fact that I now have 2 healthy options to indulge in that taste anything but. THRILLED!

The Healthiest Double Chocolate Cookies

This cookie recipe comes together like any other recipe. Meaning, there’s nothing special or complicated you have to do. You don’t even have to wait for the dough to chill. You simply mix all the ingredients together, form the dough into balls and let them bake away.

The only time you will need to wait is during the baking process (obvi) and once they come out of the oven. When they’re properly cooled, the cookies will be soft and fudgy. BUT you do need to give them about 10 minutes to sit on the baking sheet after baking before transferring them to wire racks to cool completely. Otherwise, you might end up breaking some of them in half. Just FYI.

Let’s talk about coconut sugar. I’ve always been curious about it, but didn’t really know what it was, what it tasted like, and how it would behave in baked goods. But I gave it a go anyways. Usually I will use other natural sweeteners like honey or maple syrup in my healthy baking recipes. Which works great, btw. But I was clearly in the mood for something new.

Coconut sugar happens to be pretty amazing stuff. It comes from the coconut palm, is also a natural sweetener that is minimally processed and is wonderfully sweet.

What else makes the cookies healthier than traditional double chocolate cookies, you ask? Here’s a rundown:

Coconut Oil is substituted for butter or shortening.

Dark Chocolate Chunks (because dark chocolate is healthy, you know).

Coconut  Sugar instead of granulated or brown sugar.

Gluten-free Flour, which basically means no grains. Notes on exactly what kind of flour I used are in the recipe below.

Unsweetened Cocoa Powder. Not only does it help with the richness and fudginess of the cookies, but unsweetened cocoa powder is highly nutritious as well.

Medjool Dates. Add just a little more natural sweetness and help amp up the chewiness factor.

Ingredients
  1. 1 cup coconut sugar
  2. 1/2 cup coconut oil
  3. 1 large egg plus 1 large egg yolk
  4. 1 teaspoon pure vanilla extract
  5. 1/2 teaspoon salt
  6. 1/2 teaspoon baking powder
  7. 1/2 teaspoon baking soda
  8. 1 3/4 cup gluten-free baking flour (I used Bob's Red Mill flour. You can also use buckwheat flour or any other gluten-free flour you prefer.)
  9. 1/4 cup unsweetened cocoa powder
  10. 1/2 cup (about 4-5) medjool dates, cut into pieces
  11. 1 cup chocolate chunks
Instructions
  1. Preheat oven to 325 degrees F. Line a baking sheet with parchment paper.
  2. 1. In the bowl of your stand mixer, cream together coconut sugar and coconut oil until combined. Add egg, egg yolk, and vanilla and mix until incorporated.
  3. 2. Stir in salt, baking powder, and baking soda. Once incorporated, add flour as well as cocoa powder and mix until combined.
  4. 3. Remove bowl from the mixer and fold in dates and chocolate chunks.
  5. Drop cookie dough by the spoonfuls onto the prepared baking sheet and place in the oven. Let bake for 8-10 minutes, remove from the oven and let cookies cool for 10 minutes on the baking sheet. Transfer cookies to wire racks to cool completely.

  3. Yummy & it’s guilt free! Wanted to try baking it now but can’t find gluten free baking flour & coconut sugar. Any substitution?

  4. These are SO yummy and rich! I just made two dozen and maybe ate half of them already 🙂 followed the directions exactly, except used regular flour instead of gluten free. I made about 1 inch balls and flattened them down just a bit, and they came out fluffy and fudgy on the inside with just a hint of coconut. Will make again! Maybe will try adding shredded coconut next time.
